buffalo wings cooking - help plz

Im on a suicide diet but i plan on making some wings for some friends.
The last time I've made wings they turned out okay but now i plan to deep fry them for 15 minutes in canola or peanut oil.

The thing im worried about is i dont want to pass the oil's flash point on my GE stove top, but i do want to keep the wings at about 350. I would buy a thermometer for this but im in an out of the way place at the moment. How far past medium do you boil oil at?

I've never understood the point of (buffalo or otherwise-named) wings. They do absolutely nothing for me.

He probably just hasnt had a good batch.

Ya, I've had some with too much vinegar in the past. I think it's turned me off of them for good. Oh ya, what’s with the blue cheese? Yuck!

Well im all set! I just bought a deep fryer, the wings are in the freezer, and i've got about 4 different sauces to choose from. And butter (ya mix it with the sauce).
Austin texas has a place called Tears of Joy. They basicly only sell hot sauce (some you can't get anywhere else). If i have time at all before Sunday, im going down there to get something spicy and store made.

Well, first there's hardly any meat on 'em. Second, they're greasy and ya get sauce all over your hands and mouth. Finally, I find the spicy part unappealing - it's usually nothing more than "heat" and adds nothing to the flavor. Don't get me wrong, I love hot, spicy food. But I don't care much for tabasco-style hot sauce, I like something made from, say, habaneros, like Smack My Ass and Call Me Sally. It enhances the flavor of what you're eating, doesn't cover it up with heat.
