Your sound problems might have to do with the -hires_sound 2 switch located in the d2x.ini file. If you don't have hires sounds installed? I don't think a 10 year old would need iTouch anyways.

The DS should be plenty enough for games and stuff.

....and just for the record, the iTouch 3.x software comes with parental control.

To get the mouse back for Desktop?
Hit the Esc key to bring up D3's menu could release the mouse but still work in both windows?
When you resume to the game. It should capture the mouse again.

From memory, this is how D2X-XL works in window mode.
